Reading the Make your own Vanilla thread from Jasonsmom, I was reminded of how I sometimes make my own vanilla sugar. Delicious, IMO anyway.

Slice a vanilla bean lengthwise, and place it into a jar in which you have filled with 2 cups of sugar, screw lid on the jar and let sit for a week or two. Shake it up every once in a while. Then use as you would your regular plain sugar.

I like it on my oatmeal, and in my tea. :)
