Grandkids went to the races, had elephant ears and can't stop talking about how good they are. Any recipes out there I can try for them?? Thanks.

When my boys were young I would use Rhodes frozen bread. After the loaf thawed and risen. I would punch it down and separate it in portions, roll it out (not too thin) and fry it until light brown. Place it on paper towel to absorb any excess grease. Then dust with whatever taste you want. Such as cinnamon-sugar, powdered sugar, cocoa, jelly, preserves, peanut butter, etc.
You know thats been a long time ago. Sweet memories.

I've used the method where you buy the frozen bread dough and fry it. I think it is better than the mix that you can buy here(Cafe Du Monde Beignet Mix). When I was younger we had a bakery in the front of our street and we would get the fresh dough from the baker. We'd let it rise, then punch it down and cut it into pieces. We made small holes in it to make it not have air pockets.
My grandma makes them with just flour, water, and baking powder.
They are good every way you make them!!
Incredibly fattening.. now I want some. :oops:

Oh Toadstool - the beignets from Cafe Du Monde! Mmmmmmmm. I have a box of the mix in my cabinet right now. We were introduced to these wonderful little creatures when my daughter competed in the Junior Olympics in New Orleans the week before Katrina! And we love to make them. We found the mix about a month ago at World Market not to far from here. Love them.

by the way, my hubby's grandmother always called the other pastry "elephant tracks" because we flatten them out so much before we bake them. they are delicious too no matter what they are called.
