I had too may eggs this weekend so here is how I make an easy frittata - you can use any ingredients, vegetable or meat, that you have in the fridge.

I love my immersion blender too. In fact so much I gave my blender to the local food bank thrift store recently since I hadn't used it since I got the hand blender.
That and a food processor does me just fine.
